
Who doesn't love cilantro lime chicken? And who doesn't love kabobs? I present to you the perfect chicken dish to add to your arsenal this summer! Packed full of flavor, you are sure to impress your guests this summer with this recipe! We're talking tangy chicken, carmelized pineapples, seared peppers, all loaded onto a kabob and grilled to perfection.
It's griddle season, baby. We have a Blue Rhino Griddle that we absolutely adore. We've pretty much stopped using our grill at this point, and just use the griddle because you can cook almost anything on it!
Pro Tip: This would make for a wonderful Father's day gift this year! We actually bought my dad a griddle for Father's day a couple years ago, and he loves it!! Blue Rhino makes a great griddle, and so does Blackstone.

I started making these kabobs a few years ago, and they quickly became a staple in our household. So delicious and so vibrant. They are always a hit for our guests! We usually serve with a salad and street corn. ( recipe coming soon)
My family has officially rated my kabobs a 10/10, and they don't give their critiques lightly. They judge on presentation, aroma, texture, and of course, flavor. These kabobs won them over instantly!
To Note: This same recipe works wonderfully for a tequila lime kabob. Just add 1/3 cup of tequila into your mix

Ingredients
2lbs of Chicken Breast
1/2 Fresh Pineapple
1 Orange Pepper, 1 Red Pepper
1 Onion
Marinade
4 Tbsp Olive Oil
Juice of 3-4 Limes
3 tbsp of rice vinegar
1/2 Tbsp Red Chili Flakes
3 Cloves Garlic, Minced
1 Cup of Fresh Cilantro, Chopped
Directions
Start with marinating your chicken. Combine all marinade ingredients into a bowl, and whisk together. Cut your chicken into 1nch cubes and toss in with your marinade. Make sure each piece of chicken is coated well, then cover and put into the refrigerator. The chicken needs at least an hour marinate, but longer is better. If you can start marinating about 4 hours before, that is ideal!

When you are ready to put together your kabobs, Cut up your peppers, onion, and into 1nch pieces. Cut your pineapple in half, then cut into thirds. Then cut into 1/2 inch wide slices.
Now you're ready to load your skewers. I aim for about 3 pieces of chicken per skewer. This made about 15 kabobs in total!

Turn your griddle or grill onto medium high heat, then lay your kabobs. For the griddle, I cooked for about 5 minutes on one side. You want your chicken to be golden brown and your pineapples carmelized before you flip.
Once you've achieved that, turn your kabobs and cook for another 5 minutes or so. Depending on the strength of your grill or griddle, this may vary for you.

Remove from the griddle, and let rest for a couple minutes. Serve with any side you like - I griddled up some street corn, and served with a plum salad. Your chicken should be tender, juicy, and packed full of flavor! The sweet pineapple goes so well with the cilantro lime. Your taste buds will be tingling on this one!
